But, let's face it. Eating out isn't always cheap. Neither are medical expenses. Between bi-weekly visits to the chiropractor and meals on the go (since my back hasn't allowed me to cook) my family has been spending a lot of money. But hey, you gotta do what you gotta do.
Now that I’m feeling better, Cliff and I are determined to be more budget conscious. We created a meal plan of home-cooked goodness that will carry us through the next 12 days. Dinners will be at home and leftovers are for lunch the next day.
Our grocery bill for this food schedule came to just over $80. If all goes according to plan, we'll be able to eat lunch and dinner for $3.45 per person over the next (almost) two weeks!
Here’s our plan:
6/2 Pulled BBQ Chicken sandwiches + corn on the cob | 6/3 Lemon-pepper grilled vegetables | 6/4 Chicken tacos |
6/5 Pasta with home-made marinara sauce | 6/6 Grilled chicken garden salad | 6/7 Mustard-marinated chicken breast + garlic potatoes |
6/8 Southwest chicken chili | 6/9 Pasta with home-made marinara sauce | 6/10 Curried vegetables over jasmine rice |
6/11 Lemon-pepper grilled vegetables | 6/12 Lentil + brown rice soup (a new recipe!) | 6/13 Hamburgers + side garden salad |
